Every morning we hand roll our dough using fine grade ‘00’ flour. We then cold ferment it for a minimum of four days, giving it an airy texture and soft crust.
Using milk from Canadian dairy farms, our Fior Di Latte A.K.A “fresh mozzarella” is made in-house daily by stretching and pulling the heated curd to create a smooth, flavourful cheese.
Since opening our doors at the Chinook Centre in 2014, we have become a mainstay in South Calgary where guests are offered our warm brand of authentic Italian hospitality, where simplicity and freshness are the standard.
